Lemon soba noodle is a Japanese noodle soup in dashi broth, topped with sliced lemon.

Ingredients
- 6 ounces soba noodles
- Dashi broth;
- 2 cups of water
- Dashi powder (Kombu-dashi and Katsuo-dashi, both are better)
- Noodle soup;
- 3 tbsp soy sauce (I like usukuchi(light-color) soy sauce)
- 2 tbsp mirin
- 2 tbsp cooking sake
- Toppings;
- Sliced lemon
- Sea weeds
- Boiled shrimps (microwave)
- Green scallion etc
Instructions
1. Make Noodle soupPut water and melt dashi powder in a saucepan and bring to a boil.
Add soy sauce, mirin, and cooking sake. Mix well.
2. Prepare Toppings
Cut the lemon.
3. Boil Noodles
Bring a large pot of water (7-8 cups) to a boil.
Once the water is boiling, add the soba noodles and quickly stir so the noodles don’t stick to each other.We do not use small pan when we cook noodles.
Cook the soba noodles according to the package instructions.
Keep the water boiling on medium to medium-high heat.
Drain the soba noodles and serve the noodles in individual dishes.
Place lemon on the noodles and divide the noodle soup.
Place the shrimp, sea weeds, and green scallion if you like.
